Porcupine Meatballs

Ingredients
- 1 lb lean ground beef
- 1 lg egg (slightly beaten)
- 1/2 cup Minute rice (uncooked)
- 2 tblsp onion finely chopped
- 1 teasp salt
- 1 teasp Worcestershire sauce
- 1 lg can tomato juice

Preparation
Step 1
Combine ground beef, egg, rice, onion, salt & Worcestershire sauce; mix well with hands.
In a large pot or large deep skillet, pour about 1 cup of tomato juice.
Form hamburger mixture into balls (about the size of a small baseball).
Place meatballs on top of juice in pot.
Pour the rest of the tomato juice on top of meatballs.
Bring to a boil; turn heat down immediately to a simmer & cover with lid.
DO NOT STIR!!!
Let meatballs simmer in juice until done, approximately 30-45 minutes.
When done, gently remove meatballs one at a time & place in serving bowl.
Pour juice over meatballs. (Juice should have thickened during cooking process due to starch in rice.)
