Ingredients

  • Caramelized onions:
  • 3 spanish onions 1|4 inch sliced
  • 2 T canola oil
  • Roasted Yellow Peppers:
  • 3 large bell peppers
  • corned, cut in half and seeded
  • Meatloaf:
  • 1 T oil
  • 1 T butter
  • 1 c minced onions
  • 3 garlic cloves minced
  • 1 |3 c beef broth
  • 1 T tomato paste
  • 1 lb italian sausage, skins removed
  • 1 and 1|2 lbs ground sirlion
  • 1 c bread crumbs soaked in 1|4 c beef stock
  • 2 large eggs beaten
  • fresh parsley

Preparation

Step 1

Carmelized onions: (This is for the top on the meatloaf)
heat oil over medium high heat add onions and saute, stirring constantly, until soft and carmelized, about 25 minutes

Roasted peppers:
Preheat broiler. Place halved peppers, skin side up in oven till skin blisdters and turns black, rotate baking sheet if needed. Place peppers in covered bowl and put in fridge immediately. Once cool to touch, peel skins and dice.

Meatloaf:
preheat to 350. Heat oil in pan, add onions, garlic till sauted. remove from heat, add beef broth and tomato paste and stir.

in large bowl combine hamburger, sausage, onion mix, peppers, breadcrumbs and eggs. season with salt and pepper. Divide into 6 equal portions and shape into small loaf on aking sheet.

top each with carmelized onions and bake for 45 minutes,
