Ingredients
- 1 whole Chicken-boiled, skinned and de-boned
- 1 pkg Corn Tortillas
- 2 cans Mild green enchilada sauce
- 1 lg pkg Shredded blended Mexican cheeses
- 1 medium Onion (peeled & finely chopped)

Preparation
Step 1
Heat 1 can enchilada sauce in a small skillet
With tongs, heat tortillas 1 at a time in sauce.
Place tortilla in Pam sprayed baking dish & fill with pieces of chicken & roll up (place seam side down)
Repeat for all 20 tortillas
Heat 2nd can of sauce in skillet and pour over rolled enchiladas
Cover with cheese
Sprinkle with onions
Bake @ 350 degrees approximately 30 minutes or until cheese is melted and bubbly
