Carrot Cake with Cream Cheese Icing

Ingredients
- 2/3 cup oil
- 1 cup sugar
- 2 lg eggs
- 1 1/2 cups flour
- 1 teasp baking powder
- 1 teasp baking soda
- 1/2 teasp salt
- 1 teasp cinnamon
- 1/2 teasp all-spice
- 1/2 teasp nutmeg
- 1 teasp vanilla
- 1 cup grated or shredded carrots
- 1/2 cup crushed pineapple
- 1/2 cup raisins (optional)
- 1 lg pkg cream cheese (softened)
- 1 stick butter (softened)
- 1 teasp vanilla
- 1 box powdered sugar

Preparation
Step 1
Blend oil & sugar.
Add eggs one at a time.
Add all dry ingredients & blend well.
Add carrots, pineapple & raisins.
Pour into a sprayed 9" X 13" baking pan.
Bake @350 degrees for 30 minutes or until done.
Let cool, top with cream cheese icing.
To make icing; cream together cream cheese & butter with electric mixer.
Blend in powdered sugar & vanilla.
Spread on cooled cake.
