Stir-Fried Pork with Peppers 1 Picture

Ingredients

  • 450 g (1lb) lean pork tenderloin, thinly sliced
  • 12 spring onions, sliced
  • 1 red pepper, seeded and sliced
  • 1 yellow pepper, seeded and sliced
  • for the marinade
  • 4 tbsps dark soy sauce
  • 2 tbsps clear honey
  • 2 garlic cloves, crushed
  • 1 small red chilli, sliced

Preparation

Step 1

In a bowl mix together the marinade ingredients. Add the pork and stir to ensure the meat is evenly coated. Cover, and leave to marinate in the refrigerator for 20 minutes.
Preheat a non-stick wok or large frying pan. Drain the pork, reserving the marinade, and add to the pan. Stir-fry the pork until the meat starts to firm up. Add the peppers and spring onions along with the reserved marinade.
Mix together well and serve with boiled noodles or basmati rice (40g /11/2oz uncooked weight per person).

Here’s a tip: For a fuller flavour, allow the pork to marinate overnight in the refrigerator.
