Ingredients

  • 5 to 5 1/2 C AP flour
  • 1 C sugar
  • 2 eggs, beaten
  • 1 C shortening (after melting)
  • 1 1/4 C molasses
  • 1 t salt
  • 2 t cinnamon
  • 1 t cloves
  • 2 t ginger
  • 1 t nutmeg
  • 1 t baking soda

Step 1


Thoroughly mix 4 cups flour, baking soda, salt, and spices.

Melt shortening in large saucepan. Add sugar, molasses, and eggs. Mix well. Cool slightly, then gradually add 4 C dry ingredients and mix well.

Turn mixture onto a lightly floured surface. Knead in remaining dry ingredients by hand. Roll dough out on foil to 1/8" thickness. Cut out pieces with cutters or knife. Place foil on cookie sheet to bake.

Bake at 375 F for 8-10 minutes, depending on size. Let cool on cookie sheet for a few minutes before removing to rack to cool completely. Remove foil when gingerbread is cold.
