Lace Cookies

Ingredients
- 1 cup All-purpose flour
- 1 cup Cashews (finely chopped)
- 1/2 cup Light corn syrup
- 8 tblsp Butter (1 stick)
- 2/3 cup Brown sugar (firmly packed)
- 1 teasp vanilla

Preparation
Step 1
Sift flour and toss with cashews, set aside.
In a medium sauce pan, combine corn syrup, butter and brown sugar.
Bring to a boil over medium heat, whisking constantly. Boil approximately 2-3 minutes.
Remove pan from heat, add vanilla, mix and add cashew/flour mixture 1/3 at a time, stirring constantly.
Drop batter by level tsp about 3 inches apart on cookie sheet. (5 cookies per cookie sheet)
Bake @ 350 degrees 6-7 minutes or until most of bubbling stops & cookies are a caramel color.
Remove from oven and let set on cookie sheet approximately 5 minutes or until you can lift cookie easily with spatula.
Transfer to foil & let them cool completely. (10 minutes)
Store in an airtight container or Ziploc.
