Ingredients
- 1 yellow cake mix
- 1 3.5 oz pkg instant lemon pudding
- 4 lg eggs
- 3/4 cup oil
- 1 1 lb box powdered sugar, sifted
- 1 lg lemon zested
- 3 tblsp butter
- 3 tblsp water
- 1/3-1/2 cup fresh lemon juice

Preparation
Step 1
Spray a 24 count mini muffin tin with Pam.
Combine all cake ingredients and mix on low for 2-3 minutes. Mix on medium speed 2 minutes.
Full sprayed mini muffin tins half full
Bake @350 degrees approximately 12 minutes.
Remove from oven and turn out to cool on wire rack.
To make glaze, combine all glaze ingredients and mix well.
Holding muffin on fork pierced through the top, dip entire muffin into glaze.
Set muffin on a wire rack until glaze has set / dried.
Store in air tight container.
