Ingredients
- 2 lbs Velvetta Cheese
- 2 Yellow Onions (chopped)
- 1 40 oz can Chili
- 1 pkg Corn Tortillas
- 1 cup Oil for frying

Preparation
Step 1
In a small sauce pan warm chili.
Warm 1 cup cooking oil in skillet to medium.
Spray a 9X13" baking dish and set aside.
Using tongs heat one tortilla at a time in hot oil, just a few seconds.
Place into baking dish and fill with small amount of cheese and roll up with seam on bottom
Repeat for all tortillas.
Pour warm chili over enchiladas and cover with remaining cheese & top with onions.
Bake approximately 25 minutes or until all cheese is melted and chili is bubbly.
