Ingredients
- 4 lb watermelon rind
- 1/2 cup salt
- 1 gallon water
- 9 cups sugar
- 8 cups water
- 4 lg lemons (sliced & seeded)
- 4 lg cinnamon sticks
- 4 teasp whole cloves

Preparation
Step 1
After eating a watermelon, peel off all green and use only white rind of the watermelon for preserves.
Leave a very small portion of pink, cut into small cubes.
Soak in 1/2 cup salt to gallon of water over night.
Cut a square of cheese cloth and put cinnamon sticks & whole cloves in it & bundle & tie with a string.
Remove rinds from salt water and cook in clear water for about 30 minutes or until tender, drain well.
In a large pan, make syrup of sugar, water, lemons and bundle of cinnamon & cloves.
Boil the syrup and spices 5 minutes before adding the rind.
Add rinds and cook until transparent and clear.
Remove spice bag and pour rinds into sterilized jars and seal.
