Ingredients

  • 4 large tomatoes (sliced)
  • 2 med-lg sweet purple onions (thinly sliced & rings separated)
  • 1 lg cucumber (peeled or not) cut into thin slices
  • 1/4 cup olive oil
  • 2 tblsp red wine vinegar
  • 2 tblsp fresh parsley (minced)
  • 1 teasp salt
  • 1 teasp Italian seasoning
  • 1 teasp green onion (finely chopped)
  • 1/2 teasp sugar
  • 1/4 teasp garlic powder
  • 1/4 teasp pepper

Preparation

Step 1

Combine tomatoes, cucumber & onions.

Combine the rest of the ingredients & drizzle over the tomatoes & onions.

Cover & refrigerate at least 2 hours before serving.
