Ingredients

  • 2/3 cup sugar
  • 3 tblsp cornstarch or 6 tblsp flour
  • 1/4 teasp salt
  • 3 med-lg egg yolks
  • 1 cup evaporated milk
  • 1 cup water
  • 1 teasp vanilla
  • 3 lg bananas (sliced)
  • 2 tblsp lemon juice
  • 3 med-lg egg whites
  • 1 tblsp cream of tarter
  • 1/2 cup sugar
  • 1 9" pie crust - baked

Preparation

Step 1

Mix first 4 ingredients in saucepan.

Combine milk & water, stir in gradually until smooth.

Cook over low heat till thick, 10 minutes.

Remove sauce pan, add vanilla; set aside to cool.

Slice bananas & toss with lemon juice to prevent discoloring.

Place good amount of bananas in the bottom of a baked pie crusts.

Pour pudding over bananas.

Place remaining bananas over pudding.

With electric mixer, whip egg whites on high speed with cream of tarter.

When peaks start to get stiff, gradually add sugar; keep beating until peaks are stiff.

Spread on top of bananas & pudding.

Bake @350 degrees just until meringue peaks brown.

Let pie cool before serving.
