• Puree:
• 1/2 c cucumber, seeded and chopped
• 1 shallot, chopped
• 2 T white wine vinegar
• 1 t sugar
• Pinch red pepper flakes
• Stir in
• 2 T plain yogurt
• 2 T mayo
• salt and pepper to tasted
• Drizzle over:
• 2 cups fresh spinach leaves
• 1/4 cup radishes thinly slice
• homemade crutons
