Mexican Casserole

Ingredients
- 2 tablespoons vegetable oil
- 1 pound cubed skinless, boneless chicken breast meat
- 1 package taco seasoning mix
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 cup salsa
- 1 1/2 cups shredded Mexican-style cheese
- 3/4 cup sour cream
- 4 7" tortillas, (cut square using baking dish as template)

Preparation
Step 1
In a large skillet over medium high heat, saute chicken in oil until cooked through and no longer pink inside. Add taco seasoning, beans, salsa and a little water to prevent drying out. Cover skillet and simmer over medium low heat for 10 minutes.
Preheat oven to 350 degrees F (175 degrees C).
Spray a 8"X8" liberally with cooking spray.
Place one tortilla on the bottom, top with 1/3 chicken mixture, 1/3 cup cheese, and dot with 1/4 cup sour cream.
Repeat two more times. Next place last tortilla on top of casserole and top with remaining 1/2 cup cheese.
Bake for 30 minutes.
Allow to rest for 5 minutes before serving.
