Preparation
Step 1
Pre-heat oven to 350 degrees.
Thaw and wash turkey. Remove neck & giblets from the cavities of the bird.
Set on a couple of paper towels to drain.
Pull out two long sheets of heavy duty foil and fold one side together to seal and make one large square sheet.
Butter an area of the foil where the turkey will rest. Salt the buttered foil.
Place turkey on the butter area of the foil. Use the rest of the butter to butter the turkey all over.
Salt turkey.
Fold foil around turkey and seal. Place in a deep roasting pan.
Place in a pre-heated 350 degree oven, bake for 1 hr.
Turn the temperature down to 250 degrees.
Leave in oven all night (9 pm - 7am)
When turkey is finished, open foil and turn oven temperature back up to 350 degrees and allow to brown. Approximately 10 minutes, but watch it so you don't over brown.
Remove turkey and put foil back around it and allow to rest until ready to carve.
Remove breasts and de-bone your turkey.
Place skin on top of carved meat to keep moist (you can also drizzle with hot turkey or chicken broth before serving)
Keep it covered with foil over your platter.
