Sour Cream Enchiladas 1 Picture

Ingredients

  • 2 cans cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 sml can chopped green chilies
  • 1/2 tsp salt
  • 1/2 cup chopped green onions
  • 2 cups cooked chicken
  • 1 pkg corn tortillas
  • 1/4 cup oil for frying
  • 2 cups shredded cheese

Preparation

Step 1

Mix first 4 ingredients in a saucepan & heat.

Dip tortillas in hot oil for a few seconds to soften & drain on paper towels.

Place portion of cheese, chicken & about 1 tblsp of sauce in center of tortillas & roll up.

Place seam side down & place tightly against each other in shallow pan.

Pour remaining sauce over enchiladas & sprinkle additional cheese.

Bake @ 350 degrees for 20-30 minutes or until bubbly.

Remove from oven & sprinkle with chopped green onions.
