Ingredients

  • 1 box Jiffy cornbread mix
  • 1 medium egg
  • 1/2 cup milk
  • 1 can cream style corn
  • 1 cup shredded Monterey Jack cheese
  • 1 4 oz can diced green chile peppers (drained)

Preparation

Step 1

Pre-heat oven to 400 degrees. Lightly spray a 6 cup muffin tin

Place cornmeal mix in a large bowl, stir in egg, milk, creamed corn, cheese and green chiles

Spoon batter evenly into muffin tin cups

Bake in oven for 20-25 minutes or until golden brown and cornbread puffs up and pulls away from sides
