Ingredients

  • Yule Log:
  • 5 eggs
  • 3/4 C flour
  • 1/2 tsp baking powder
  • 2 T unsalted butter, melted
  • 1/2 C sugar
  • Topping:
  • 1/2 C raspberry or strawberry jam
  • 1 1/2 C 35% cream
  • 12 oz white chocolate, chopped

Preparation

Step 1

With rack in middle position, preheat oven to 350. Line a 15x10-inch baking sheet with parchebt paper and butter.

In a bowl, beat eggs with eletric mixer until frothey. Add sugar and vanilla. Beat until the mixture thickens, about 5 minutes.

In a bowl, sift the flour and baking owder. Gently fold into the first mixture with a spatula. Stir in the butter. Spread the batter onto the baking sheet. Bake for approx. 15 minutes or until a toothpick comes out clean.

Invert cake and immediately roll and let cool. Unroll and spread the filling.

Filling: In a saucepan bring cream to a boil; remove from heat and add the chololate. Let melt for 5 minutes without stirring.

Stir until the mixture is smooth. Cover and refrigerate until it is cold.

In a bowl ship the chocolate mixture until the texture resembles soft whipped cream.

Spread the jam on the cake and roll (maybe try spreading a bit of chocolate first?). Spread the frosting on the log, making streaks with a for to imitate the bark of a tree
