Ingredients

  • 4 quarts squash (unpeeled & thinly sliced)
  • 6 medium onions (peeled & sliced)
  • 3 cloves garlic (finely chopped)
  • 1/3 cup pickling salt
  • 5 cups sugar
  • 3 cups cider vinegar
  • 1 1/2 teasp turmeric
  • 1 1/2 teasp celery seed
  • 2 tblsp mustard seed

Preparation

Step 1

Combine squash, onion, and whole cloves garlic.

Add salt.

Cover with crushed ice, mix throughly.

Let stand 3 hours,

Drain well.

Remove garlic.

Combine remaining ingredients and pour over squash mixture.

Bring to a boil.

Fill hot sterilized jars 1/2 inch from the top.

Process in boiling water bath for 5 minutes.
