Ingredients
- 4 quarts squash (unpeeled & thinly sliced)
- 6 medium onions (peeled & sliced)
- 3 cloves garlic (finely chopped)
- 1/3 cup pickling salt
- 5 cups sugar
- 3 cups cider vinegar
- 1 1/2 teasp turmeric
- 1 1/2 teasp celery seed
- 2 tblsp mustard seed

Preparation
Step 1
Combine squash, onion, and whole cloves garlic.
Add salt.
Cover with crushed ice, mix throughly.
Let stand 3 hours,
Drain well.
Remove garlic.
Combine remaining ingredients and pour over squash mixture.
Bring to a boil.
Fill hot sterilized jars 1/2 inch from the top.
Process in boiling water bath for 5 minutes.
