Ingredients

  • 25 med-lg cucumber (washed & cut into thin slices)
  • 6 med-lg onions (peeled & thinly sliced)
  • 2 med-lg green bell peppers (seeded & finely chopped)
  • 2 cloves garlic (finely chopped)
  • 1/2 cup pickling salt
  • 3 cups cider vinegar
  • 5 cups sugar
  • 2 tblsp mustard seed
  • 1 1/2 teasp celery seed
  • 1/2 teasp whole cloves
  • 1 tblsp ground turmeric

Preparation

Step 1

In a large bowl, mix together cucumbers, onions, bell peppers, garlic & salt.

Allow to stand approximately 3 hours.

In a large saucepan, mix cider vinegar, sugar, mustard seed, celery seed, whole cloves and turmeric. Bring to a boil.

Drain liquid from the cucumber mixture.

Stir the mixture into the boiling vinegar mixture.

Remove from heat shortly before the combined mixtures return to boil.

Transfer to sterile jars.

Wipe rims of jars and place warm lids & rings on jars.

Allow to cool to seal.
