Pineapple Upside Down Cake

Ingredients
- 1 can pineapple rings (drained)
- 1 can crushed pineapple
- 1 jar maraschino cherries
- 2 sticks butter
- 2 1/2 cups brown sugar
- 1 pkg yellow cake mix (& ingredients to make cake)

Preparation
Step 1
Using a large iron skillet or 2 - 8" round cake pans, melt butter.
Add crushed pineapple & brown sugar, simmer on low heat until sugar dissolves.
Remove from heat, arrange pineapple rings & cherries in a design.
In a large mixing bowl, prepare yellow cake mix according to pkg directions.
Gradually spread evenly over pineapple arrangement.
Bake @350 degrees for approximately 40-50 minutes. Insert toothpick into center, when it comes out clean, it is done.
Let cool in pan 10 minutes.
Place a plate or platter that is a little larger than the pan over the top of the pan & invert cake onto the plate.
