Ingredients
- 3 tbsp all-purpose flour
- 2 tsp sugar
- 1 tsp baking powder
- pinch of salt
- 2 eggs
- 1 tsp lemon zest
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 cup ricotta cheese
- 2 oz fresh blueberries

Preparation
Step 1
1. In a bowl, combine flour, sugar, and baking powder. Stir in eggs, lemon zest, vanilla, salt and ricotta cheese until well blended. Gently fold in blueberries.
2. Pour 1/4 cup batter onto hot griddle for each pancake. Cook until bubbles form on top, then turn to brown other side. Serve immediately.
