Ingredients
- 2 Pie Crusts (see my recipe)
- 1 cup frozen raspberries
- 1 cup frozen blueberries
- 1/2 cup water
- 1 cup sugar
- Juice and zest of a lemon
- 2 T. cornstarch mixed with cold water for thickening
- 1 cup fresh raspberries
- 1 cup fresh blueberries

Preparation
Step 1
In a large pot heat frozen berries, water, and sugar and bring to a boil. Add lemon juice and rind and stir. Add fresh berries being careful when stirring to not break up the berries. Add thickening mix and stir. After it starts to thicken remove from heat and cool.
Place one pie shell in pie plate and pour cooled berry mixture into pie. Add other pie crust and crimp to seal edges.
Brush with egg wash (1 egg mixed with 2 T. milk).
Bake at 375 F for 45-50 minutes. Let cool completely before serving to allow berry mix to set up.
