Ingredients

  • 20 ounces white chocolate, chopped and divided
  • 3 tbsp. unsalted butter
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. ground cinnamon
  • 1 (250 g.) pkg. cream cheese, softened
  • 1/4 cup all-vegetable shortening
  • Ground nutmeg for sprinkling (optional)

Preparation

Step 1

1. In a large bowl, combine 8 ounces white chocolate and butter. Microwave on High in 30-second intervals, stirring between each, until melted and smooth. Stir in nutmeg and cinnamon.
2. In a large bowl, beat cream cheese at medium-high speed with a mixer until creamy. Beat in white chocolate mixture until smooth. Cover and chill overnight or until mixture is firm enough to roll.
3. Roll mixture into 1 1/2 inch balls.
4. In a large bowl, combine remaining 12 ounces chopped white chocolate and shortening. Microwave on High in 30-second intervals, stirring between each, until melted and smooth. Using a fork, dip each ball into melted white chocolate mixture. Shake off excess and place on wire rack. Sprinkle nutmeg over truffle if desired. Let truffles stand until white chocolate sets. Store covered, in the freezer.
