Eggs in Hell
By Shaylie
Breakfast, Mario-style. "This is so easy," Batali says with his typical exuberance. "You make a spicy tomato sauce, crack eggs into it, let it all cook for about four minutes, and it's good to go."

Preparation
Step 1
Prepare a medium-hot fire, or set a gas grill to medium-high. Heat a skillet, preferably cast iron, on the grill. Add the olive oil and heat until just smoking.
Add the chopped onion, garlic, jalaperio peppers and chile flakes; cook until the vegetables are softened and light brown, about 7 minutes. Add the tomato sauce and bring to a boil. Immediately lower the heat until
the mixture simmers, then carefully crack the eggs one by one into the sauce. Cook 5 to 6 minutes or until eggs are set as desired. (Batali prefers the whites set but the yolks still quite runny.)
Remove from heat and sprinkle on the cheese. Allow to cool for 3 to 4 minutes before serving.
