Ingredients
- 2 - 20 oz cans of Chunk pineapple
- 1 cup of sugar
- 6 T flour
- 2 cup - Sharp Cheddar Cheese
- 3/4 c. butter
- 1-1/2 c. crushed Ritz crackers
Preparation
Step 1
Drain pineapple but reserved juice. In medium sauce pan heat juice with sugar and flour until sugar is dissolved and comes to a slight boil. Remove from heat.
Add pineapple and cheese. Mix thoroughly and place in a greased baking dish (8x8”).
Melt butter and add cracker crumbs. Put on top of pineapple mix and back @ 350-degrees for 20-30 minutes.
*Mom’s note: Good with ham! If you reduce recipe to 1/2 - only reduce the crackers to 1 c. only. (will serve 4-5 people reduced).
