Basic country loaf

This is a great basic loaf can also be changed up with addition of herbs, olives, seeds & the like

Ingredients
- 2 1/2 cups lukewarm water
- 3 tsps yeast
- 1 cup white whole wheat or spelt flour
- 5 cups all purpose flour
- 1 tsp kosher or sea salt or bread salt
- Seeds for top of loaf

Preparation
Step 1
Mix ingredients in the order given in kitchen aid stand mixer 10 min on speed 1 & 10 min on speed 2 & slap knead put in bowl cover & let rest 2-3hours or put in bread machine on dough cycle.
Punch down dough & shape into 2-3 loaves round or baguettes put round in bakers or linen lined baskets, cover let rest for 1-2 hours covered.
Score loaves & brush with cornstarch wash (1tsp cornstarch in 1/2 cup water microwave for 30 sec. Stir to dissolve), put in oven w/ steam at 450 degrees for 10 min & 15 min at 400 degrees.
Remove loaves & cool on racks.
