Ingredients
- 1/4 avocado, sliced
- 1/2 Tbs. raw almonds, slivered
- 1/4 cup tomatoes, diced
- 1/2 cup asparagus, chopped
- 1/2 Tbs. EVOO
- 1/2 Tbs. balsamic vinegar
- 1/4 tsp. black pepper
- 1/2 lime, squeezed
- 1/2 lemon, squeezed

Preparation
Step 1
Bring 1 cup of water to a boil, add asparagus and cook for about 1 minute until the Asparagus turns bright green. Drain and immediately place into cold water to preserve crispness.
In a small bowl, mix oil, vinegar, pepper & Lemon/Lime juice. Remove asparagus from cold water and pat dry with paper towels. Toss tomatoes, avocados and asparagus together with mixture from owl. Top with almonds.
