Ingredients
- 6 (4-ounce) beef tenderloins
- 3 tablespoons macadamia nuts, coarsely chopped
- 1 tablespoon fresh herb mix (basil, oregano, thyme and parsley)
- 1 cup mushrooms, stemmed
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper

Preparation
Step 1
1. Pre-heat oven to 400 degrees. Place macadamias and herb mix in a clean coffee grinder and process until they are a fine meal. Combine mushrooms and remaining ingredients in a mixing bowl. Coat the beef or chicken on both sides with the nut crust.
2. Preheat the oven to 400 degrees. Heat an oven-proof sauté pan over medium-high heat and lightly coat bottom of the pan with cooking spray.
3. Place the macadamia crusted tenderloins in the pan and brown on one side for about 2 minutes.
4. Turn over and brown for 1 minute. Place the pan in the
oven and cook for about 7 minutes for medium-rare beef
