Ingredients

  • 10 lbs beef
  • 2 cups panko
  • 1 cup buttermilk
  • 4 eggs
  • 1 cup shredded parmesan
  • 5 tsp basil
  • 5 tsp onion powder
  • 2 tsp garlic paste
  • 2 tsp Montreal steak spice
  • 12.5 quarts
  • 2 lbs fresh spinach
  • 8 cups orzo pasta
  • 2 cups shredded carrot

Preparation

Step 1

Combine panko and buttermilk, soak for 5 minutes. Add rest of meatball ingredients and for into mini meatballs.

In large saucepan, heat broth to boiling; stir in meatballs, spinach, orzo and shredded carrot. Return to boil, then reduce heat to medium. Cook at slow boil for 10 minutes, or until pasta is al dente. Stir frequently to prevent sticking.
