A treasured recipe from my husband's dear, Finnish Grandmother. After she passed, her husband made these for over 20 years for the many grandkids.

Ingredients

  • 3 sticks of butter (melted)
  • 2 cups brown sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 3 cups flour
  • a pinch of kosher salt
  • 1 teaspoon baking soda
  • 6 cups dry oatmeal
  • 1/2 cup milled flax seed
  • 1 cup chopped walnuts or pecans (optional)

Preparation

Step 1

Preheat oven to 375. Mix ingredients in a mixing bowl until moist and put onto wax paper. Make a roll using the wax paper and cut into slices. Place on a greased cookie sheet and bake for 12 to 15 minutes.

(Grampa like them baked even longer, so they were REALLY crispy. The grandkids called them dog biscuits, but loved them! Since some people like soft cookies and others crispy, I suggest baking them for the shortest time and sample the cookies to see what texture you like. Ovens can often vary too, so keep this in mind.)
