Ingredients
- 1 (15 oz) can red beans, drained & rinsed
- 1 (15 oz) can white beans (garbanzo or cannelini), drained and rinsed
- 1/2 lb fresh cooked green beans, cut into 1 inch pieces
- 2 green onions, sliced
- 1 small or half of a large red bell pepper, chopped
- 1/2 cup shredded carrots
- 2 tablespoons (about 8 pieces) sundried tomatoes, hydrated and chopped
- 1/3 cup sliced almonds, toasted
- 1/3 cup chopped walnuts, toasted
- Juice of 1 lemon (1 - 2 tablespoons)
- 3 tbsp Italian style salad dressing
- 2 tbsp chopped fresh parsley
- Salt, to taste
- Pepper, to taste
