  • CAKE:
  • 2 cups Bisquick baking mix
  • 3 Tablespoons sugar
  • 2/3 cup milk
  • 2 Tablespoons melted butter
  • 1 egg
  • ......................................
  • PUMPKIN FILLING:
  • 1 cup canned pumpkin
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 2 Tablespoons corn syrup
  • 1/2 cup raisins

Step 1

TO MAKE CAKE:
Combine all cake ingredients, stirring just until all are moistened.
Spread half the batter in a greased 9-inch square pan. Brush with melted butter and cover with half of the pumpking filling. Spoon on the remaining batter and brush again with melted butter. Cover with remaining pumpkin filling, then sprinkle with streusel topping.

TO MAKE PUMPKIN FILLING:
Combine ingredients in a saucepan. Bring to a boil and simmer for 10 minutes, stirring frequently. Cool before using.

STREUSEL TOPPING:

1/4 cup brown sugar
2 Tablespoons flour
2 Tablespoons butter
1 teaspoon cinnamon
3/4 cup chopped nuts

Blend ingredients until they are crumbly.
