Ingredients

  • 1/2 cup dry white wine
  • 8 oz sea scallops
  • 1 Tbs grated lemon rind
  • 1 Tbs grated orange rind
  • 2 tsp orange-flavored liqueur
  • 1 tsp corn starch
  • 1 tsp margarine
  • 1/4 tsp sugar
  • salt
  • toasted sesame seeds

Preparation

Grease cooking rack, then place it and the wine in 4 quart or larger
pressure cooker.
Place scallops on rack.
Sprinkle scallops with 1 teaspoon each of the lemon and orange rinds.
Cook under high pressure for 1 minute then use rapid pressure release.
Remove scallops and keep warm.
Remove rack.
Mix liqueur and cornstarch then add into the wine in the pressure
cooker and stir to mix.
Continue to ook and stir until sauce boils and thickens.
Stir in margarine, sugar and remaining 2 teaspoons each lemon
and orange rinds.
Season to taste with salt.
Spoon sauce over scallops.
Sprinkle with sesame seeds.
