This is the best I can find on the web for this recipe. The Pioneer Sauce recipe is actually a recipe for Herb Sauce from the recipe for "The Pioneer."

Ingredients

  • FOR THE STEAK:
  • 4- 10 oz black angus sirloins.
  • 1 qt fresh bread crumbs
  • 2 oz butter
  • 12 oz sliced mushrooms
  • 1/2 onion small diced
  • 1/2 cup shredded swiss
  • 1 1/2 tbl fresh thyme chopped
  • 1/2 tbl fresh garlic
  • 1 tsp salt
  • 1 tsp black pepper
  • FOR THE HERB SAUCE:
  • 4 Tbsp. butter
  • 1/2 tsp. minced garlic
  • 1 Tbsp. flour
  • 1 pint heavy cream
  • 1 Tbsp. basil leaves
  • 1 Tbsp. thyme
  • 1/2 tsp. salt
  • 1/2 tsp. Kitchen Bouquet

Step 1

For the steak:
In a sauce pan melt butter over medium heat. Add mushrooms, onions, garlic, fresh thyme, salt and pepper. Cook mixture for approximately 5 min until mushrooms and onions are tender and liquid has sweated out of them, drain liquid. Place into a mixing bowl and stir in breadcrumbs. Allow to cool slightly then stir in bread crumbs. Hold hot until steaks are ready. Grill steaks to desired temperature, butterfly them and place a generous amount of stuffing in the middle. Top with pioneer sauce from previous and enjoy.


For the Herb Sauce:
Precook steak in a large saucepan and remove.

Add butter and garlic (minced) to drippings. Simmer for one minute.

Add flour and blend well. Add the remaining ingredients, and cook until reduced by one-fourth volume.
