Ingredients
- • 1 quart heavy cream
- • 1 vanilla bean from pod
- • 6 large egg yolks
- • Vanilla sugar

Step 1
Heat cream in heavy sauce pan. Add vanilla and mix. In separate bowl, mix egg yolks and sugar together. Add cream to the bowl.
Take out the ramekins. Pour batter half way up the ramekins.
Place ramekins in a larger pan. Pour water on pan until ramekins are covered 1 inch from bottom.
Bake 40-45 minutes in 350 oven. Take out of oven and cool, Sprinkle sugar on top and flame top with a torch in a circular motion to caramelize the sugar.
