Ultimate Coffee Cream
Just add a few spoons to melt on top of coffee and enjoy!

Ingredients
- 12 Egg yolks
- 2 c white sugar
- 1 litre whipping cream
- 2 packages gelatin
- 1 c cold water
- 1/4 c - 1 c dark rum ( I put in a full cup)

Preparation
Step 1
Beat cream until VERY Stiff. Keep in fridge.
Put cold water in small saucepan. Add gelatin and let soak 2 minutes. Place over low heat and let it come to a mild boil, stirring occasssionally.
While waitng for water/gelatin to boil:
Beat egg yolks until light in color. Add sugar gradually, mix thoroughly each time.
After gelatin has boiled add to egg/sugar mixture, stirring briskly.
When thoroughloy mixed and cooled to room temperature, fold in whipped cream.
Blend in Rum
Pour into mason jars and refridgerate.
This makes 6-7 mason jars (500 mls) and keeps for 5 weeks.
