Ingredients
- 6 Beef short ribs
- salt and pepper
- 1/4 c olive oil
- 1 1/2 c chopped onion
- 4 c large dice celery
- 2 carrots large dice
- 1 small fennel bulb large dice
- 1 leek large dice white only
- 3 garlic cloves
- 1 bottle red wine
- fresh rosemary and thyme
- 6 c beef stock
- 1 T brown sugar

Preparation
Step 1
heat oven to 400 degrees
place ribs on a sheet pan, sprinkle with salt and pepper adn roast for 15 minutes- Remove from oven and reduce heat to 300 degrees.
Heat oilin large dutch oven and add vegtables. Cook over med.-low heat for 20 minutes. Add garlic and cook 2 minutes. Add wine and cook over high heat until reduced by 1/2 about 10 minutes. Add 1 T salt and 1 t pepper and herbs. Place the ribs on top- add the beef stock and brown sugar. Cover and cook for 2 hours.
