- 1 * 1 broccoli
- 1 * 1 or 2 garlic cloves, cut in half
- 2 * 2 tablespoons olive oil
- 1 * 1 red bell pepper, cored and cut into strips
- Fish
- 4 * 4 red snapper fillets, 175 g each, scales removed
- 2 * 2 tablespoons olive oil
- 2 * 2 tablespoons chives, chopped
- * salt and pepper

Stir-Fried Broccoli
1. Cut the head off the broccoli and separate into florets. Trim and peel the stalks and cut into sticks.
2. In a pot of boiling salted water, blanch the broccoli for about 2 minutes. Drain well.
3. In a large skillet or wok over medium-high heat, sauté the garlic cloves in the oil until golden. Discard the garlic cloves. Add the broccoli and red pepper. Season with salt and pepper. Stir-fry until tender, 3 to 4 minutes. Set aside and keep warm while you cook the fish.
Fish
1. Make a shallow cut through the skin down the middle of each fillet. Season with salt .
2. With the rack in the highest position, preheat the oven to broil.
