  • BROWNIE:
  • 1 1/2 squares unsweetened baking chocolate
  • 2 1/2 tbsp vegan margarine
  • 2/3 cup sugar
  • 2 tbsp flour
  • 1/2 tsp vanilla extract
  • egg replacer to equal 1 1/2 eggs
  • CHEESECAKE:
  • 2 1/2 squares unsweetened baking chocolate
  • 1/2 cup vegan "cream cheese"
  • 1/3 cup soy yogurt
  • 1/2 cup firm tofu
  • 1 cup sugar
  • 1 tbsp cornstarch
  • 2 tbsp flour
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt

Step 1

Preheat oven to 325F (165C).

Lightly oil an 8 inch round cake pan and set aside. In a small saucepan on medium-low heat, melt the chocolate and margarine. Remove from heat and add the sugar, flour, vanilla, and egg replacer and stir well. Pour evenly into cake pan. Set aside.

In a small saucepan on medium-low heat, melt the chocolate. While chocolate is melting, in a food processor, place the "cream cheese", yogurt, tofu, sugar, cornstarch, flour, vanilla, and salt. Add the melted chocolate and blend together until smooth. Spoon evenly over top of the brownie mixture and bake for 40-45 minutes. Cool completely, refrigerate, and serve chilled.
