  • 3/4 cup sugar
  • 6 tablespoons butter softened
  • 1 large egg
  • 1 teaspoon grated orange zest
  • 1/2 cup orange juice
  • 2 tablespoons milk
  • 1-1/2 cup self-rising flour

Step 1

Preheat oven to 375 degrees. Lightly spray 12 muffin cups with nonstick cooking spray or use paper muffin cup liners. In large mixing bowl, beat sugar and butter until light and fluffy, about 4 minutes. Add egg and beat until light. Add orange zest and vanilla, and mix well. In a small bowl or measuring cup, combine orange juice and milk. Add about 1/3 cup of the flour, stirring just until combined. Add about 1/2 of the milk mixture repeat, ending with flour. Stir just until combined. Fill prepared muffin cups about 2/3 full. Bake for 18 to 20 minutes or until a toothpick inserted is clean when removed. Remove from pan and cool on wire rack.
