Ingredients
- 2 lbs all purpose potatoes,cut into 3/4 in cubes(6 cups)
- 1 cup mayonnaise
- 2 tbsp. white vinegar or apple cider vinegar
- 1 1/2 tsp. salt
- 1 tsp. sugar
- 1/4 tsp. ground black pepper
- 1/2 cup thinly sliced celery
- 1/2 cup chopped onion
- 2 hard cooked eggs,chopped
- 1/4 cup sweet pickle relish or chopped dill pickles(optional)

Preparation
Step 1
-In 4 quart saucepot,cover potatoes with water
-Bring to a boil over high heat
-Reduce to low and simmer uncovered 10 min or until potatoes are tender
-Drain and cool slightly
-In large bowl,combine mayonnaise, vinegar, salt, sugar and pepper
-Add remaining ingredients,toss well
-Serve chilled or at room temp
