Ingredients
- to serve:
- 1 T skimmed milk
- 2 T prepared English mustard
- 1 C grated low-fat sharp Cheddar cheese
- 3 T flour
- 2 T chopped fresh chives
- 4 skinless, boneless chicken breasts
- jacket potatoes and fresh vegetables
- crisp salad

Preparation
Step 1
Mix milk and mustard in a bowl. Mix the cheese with the lfour and chives on a plate.
Dip the chicken into the milk mixture, brushing with a pastry brush to coat evenly.
Dip the chicken into the cheese mixture, pressing to coat them evenly all over.
Place on a cookie sheet and spoon any spare cheese coating on top.
Bake the chicken in a preheated oven, 400F, for 3035 minutes or until golden brown and the juices run clear.
Serve the chicken hot with potatoes and vegetables, or serve cold with a crisp salad.
