Cheeky Almond Brittle

A holiday favorite, brittle is simple to pack up as a gift and it can be easily sent through the mail. If you tuck the candy into a Ziploc® Brand container between sheets of wax paper, it should stay fresh for a month.

Ingredients
- 2 cups sugar
- 1 cup light corn syrup
- 1/2 cup water
- 2 1/2 cups slivered almonds
- 1 Tablespoon unsalted butter or margarine, plus enough to lightly butter cookie sheet
- 1 teaspoon salt
- 1 teaspoon vanilla
- 2 teaspoons baking soda
- Drop of oil, to coat spoon

Preparation
Step 1
1. Place sugar, corn syrup, and water into a heavy-bottomed sauce pan.
2. Bring to a boil and add almonds.
3. Increase heat to high and insert the candy thermometer. Keep boiling until thermometer reads 290 degrees F.
4. Remove from heat and add butter, salt, vanilla, and baking soda, and stir briskly with an oiled wooden spoon.
5. Pour mixture onto buttered cookie sheet. Spread out evenly.
6. Let cool completely before breaking into pieces.
