Ingredients

  • 1 1/4 cups flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 8 tbsp (1stick) butter
  • 1/2 cup crunch peanut butter
  • 1/2 cup sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • makes 36 cookies

Preparation

Step 1

Combine flour, baking soda, baking powder, salt and stir together with a fork or whisk

In a large bowl beat together the butter, peanut butter and sugars untiol creamy. Beat in the egg

Beating on low speed, add the dry ingredients to the butter mixture, mixig just until blended. Cover and refrigerate for 1 hour to firm the dough.

Preheat the oven to 375 , with racks in the upper and lower thirds. Line two baking sheets with parchment paper.

Scoop up dough, roll into 1 inch balls and place 2 inches apart on the sheets. Gently flatten each ball with a fork, making a crisscross pattern. If dough sticks to the fork, rinse it occasionally in warm water and dry as your proceed.

bake for 10-12 minutes or just until the cookies begin to brown, don't overbake. cool on a rack
