Ingredients
- 2 eggs
- 2 teaspoons vanilla extract
- 1/2 cup (120 g) butter
- 1/2 cup (120 g) applesauce
- 1 cup (260 g) chunky style peanut butter
- 1 1/4 cup (250 g) sugar
- 1 cup (28 g) gluten free cornflakes, crushed
- 1 cup (108 g) slivered almonds
- 2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1/2 cup (64 g) cornstarch
- 1/2 cup (50 g) garbanzo flour
- 1/2 cup (50 g) tapioca flour
- 1 1/2 cups (360 g) chocolate chips

Directions
1. Preheat oven to 350F (180C). spray cookie sheets with non-stick cooking spray.
2. Combine cereal, nuts, baking soda, baking powder, cornstarch and flours together in a mixing bowl. Set aside.
3. Place eggs, vanilla, butter, applesauce, peanut butter and sugar into the Vitamix container and secure lid.
4. Select Variable 1.
5. Turn machine on and slowly increase speed to Variable 10, then to High.
6. Blend for 10-15 seconds with tamper until smooth.
7. Stir wet mixture into dry ingredients in bowl until mixed completely. Fold in chocolate chips until evenly distributed.
8. Drop by teaspoons onto prepared baking sheets.
9. Bake for 12-15 minutes or until golden brown.
