  • 1/2 onion, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/4 tsp chipotle powder
  • 1 1/2 cups skinned, shredded turkey breast
  • 3/4 cup barbecue sauce
  • 1 bag (10-oz) tortilla chips
  • 2 cups (8-oz) shredded cheddar jack cheese
  • 1 scallion (white and green parts), trimmed and finely chopped

Step 1

Heat oven to 375. Line a baking sheet with foil.

Coat a medium nonstick skillet with cooking spray and warm it over medium heat. Add the onion and pepper and cook until tender, 4-6 minutes. Stir in the garlic, oregano, cumin, and chipotle powder and cook for 1 minute. Stir in the turkey and barbecue sauce and cook until heated through, 2-3 minutes. Remove the pan from the heat.

Spread about a 13x9-inch rectangle of chips across the foil on the baking sheet. Scatter on 1/3 of the cheese, half of the turkey mixture and half of the scallions. Repeat with one more layer of chips, turkey mixture, and scallions. Top with the remaining cheese.

Bake until the cheese melts and browns slightly, 12-15 minutes.

Tip: You can use any meat in place of the turkey-chicken thinly sliced steak, pork or ground beef
