Butter Tarts

Butter Tarts are a Canadian thing, so if you haven't heard of them before that could be why :) Everyone has their own favorite version and I love to add golden raisins to the tart shells before adding the filling. Yum!
When these bake up the filling gets a bit of a puffy sticky crust on the top and the filling stays oozy and a little bit messy! I do prefer these with a home-made pastry crust but a store-bought tart shell will do just as well.

Ingredients
- 12 tart shells (home-made or store-bought)
- 1/2 cup light brown sugar, packed
- 1/2 cup corn syrup (I use golden corn syrup)
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla
- 1/4 tsp salt
- 1/2 cup raisins

Preparation
Step 1
Preheat the oven to 425 degrees.
Divide raisins amongst the tart shells
Mix all of the other filling ingredients together until smooth.
Fill tart shells about 2/3 of the way full
bake for 12-15 minutes or until the tops develops a deep golden brown crust.
Cool slightly before serving or store at room temperature until ready to serve.
