Ingredients

  • 1 cup macadamia nuts, soaked 1 hour
  • 2 tablespoon fresh lemon juice
  • 1/4 cup pine nuts,raw, or nutritional yeast,tastes like cheese,but not raw:(
  • 1/2 cup sweet red bell pepper
  • 1 clove garlic
  • 1 tablespoon onion, green or white
  • 1/2 teaspoon salt, or more to taste
  • 1/2 cup water
  • 1/4 cup kanten agar flakes, packed to measure
  • (if using agar-agar powder use 4 teaspoons)
  • for a totally raw cheese,omit agar and use irish moss as stated in queenfluffs comments below:)

Preparation

Step 1

1.blend macadamia nuts,lemon juice, pine nuts,(or nutritional yeast),pepper ,garlic ,onion,and salt in blender till smooth. (this makes a nice cheese sauce at this point).

2.boil water and stir in kanten agar flakes until melted.note: for a totally raw cheese, use irish moss as described in queenfluff’s comments below, thanks queenfluff!!!!

3.cool slightly, add to blender and mix well.

4.transfer to 1&1/2 cup mini loaf pan (line with food wrap if not flexible) and chill several hours or overnight till firm.

5.unmold onto serving platter.serve with your favorite crackers
